Low Carb Meatloaf Muffins

Since we are eating low carb, I’m trying to find healthier versions of our favorite comfort foods. One of my husband’s favorite dishes is meatloaf, so I knew he’d be thrilled to find a meatloaf recipe that wasn’t full of breadcrumbs. Little did I know that our toddler would love them, too.

Seriously, he ate three of these meatloaf muffins between dinner and bedtime, so it will be one of the simple low carb meals we make frequently from now on. And I have to say, I liked these just as much as a regular meatloaf. Here’s the recipe so you can try them for yourself!

Meatloaf Ingredients:

  • 1 lb. ground beef
  • 1 lb. ground turkey
  • 4 oz. mozzarella cheese
  • 1/3 c. tomato sauce
  • 2 eggs
  • 1 clove garlic, minced
  • 1 tbsp. Worcestershire sauce
  • 1 tbsp chili powder
  • 1/2 tsp. parsley
  • 1/2 tsp. basil
  • 1 tsp. salt
  • 1/2 tsp. pepper

Topping Ingredients:

  • 1/4 c. tomato sauce
  • 1/4 tsp. molasses
  • 1 1/2 tsp. Splenda

Mix all the meatloaf ingredients together in a large bowl. That’s right, just dump them all in and dig in to mix. Then, place the meat mixture in your muffin tins to the top. Seriously, these things shrink up quite a bit, so unless you want one-bite meatloaf muffins, stuff them full.

Then, mix the topping ingredients, and brush the topping over the top of the meatloaf. If you prefer a thicker sauce, try low carb ketchup instead of the tomato sauce.

And in both cases, look over my stained muffin tin. It’s old. We love it. You’ll actually need a large 12-count muffin tin, and one 6-count muffin tin. It makes about 16-18 muffins.

Bake these in the oven at 375 degrees for 30 minutes. We served ours with riced cauliflower, and it was delish. I’ll post that recipe this weekend. The first night we had these, I served them with the additional topping that I had prepared. Unfortunately, my photography light blew that night, so the next day, we used ketchup on top. It’s good either way, but make sure you use a low carb ketchup. The regular stuff is full of carbs.

Ingredients
  

Meatloaf

  • 1 lb. ground beef
  • 1 lb. ground turkey

Topping:

  • 1/4 c. tomato sauce
  • 1/4 tsp. molasses
  • 1 1/2 tsp. Splenda

Instructions
 

  • In a a large bowl, mix all the meatloaf ingredients together.
  • Mix the topping ingredients in a small bowl..
  • Place the meat mixture in muffin tins that have been sprayed with Pam.
  • Brush with topping.
  • Bake at 375 for 30 minutes.
